For the Cream Cheese Frosting
๐ง ยฝ cup unsalted butter, softened
๐ง 8 oz cream cheese, softened
๐ฌ 3 cups powdered sugar
๐ฅ 1 tsp vanilla extract
Instructions
๐ฅ Preheat oven: Set your oven to 350ยฐF (175ยฐC) and grease two 9-inch round cake pans.
๐ฅ Mix wet ingredients: In a large bowl, beat eggs, oil, and sugar until smooth. Stir in the grated carrots.
๐ฅฃ Combine dry ingredients: In another bowl, sift flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually mix into the wet ingredients until just combined. Fold in coconut and nuts, if using.
๐ Bake the cake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.
๐ฐ Make the frosting: Beat the butter and cream cheese until fluffy. Add powdered sugar gradually, then mix in vanilla.
