Tzatziki Chicken Salad
You Will Need:
• 3 cups cooked and shredded chicken
• ½ cup thinly sliced red onion
• 1 English cucumber, shredded
• ¾ cup Greek yogurt
• 1 tablespoon lemon juice
• 1 tablespoon olive oil
• 2 cloves garlic, minced
• 2 tablespoons fresh dill, chopped
• ½ teaspoon salt (or to taste)
• ½ teaspoon black pepper
Instructions:
1. In a large bowl, combine the shredded chicken, red onion, and shredded cucumber.
2. In a separate bowl, whisk together Greek yogurt, lemon juice, olive oil, minced garlic, dill, salt, and pepper until well combined.
3. Pour the tzatziki dressing over the chicken mixture and stir until everything is evenly coated.
4. Taste and adjust seasoning if needed.
5. Serve chilled as a salad, in a sandwich, or with pita bread.
