Healthy Oatmeal, Apple & Carrot Cake

No sugar, no flour – just wholesome ingredients!

Ingredients:

• 2 cups (200 g) rolled oats, blended/chopped

• 1 tsp baking powder

• 1 cup (240 ml) milk of your choice

• 1 carrot, grated

• 9 dried apricots, rinsed with hot water and chopped

• 4 tbsp raisins, rinsed with hot water

• 1 apple, grated

• 1 tsp cinnamon

• 3 eggs

Basic Instructions (not shown in post, but here’s a likely method):

1. Preheat oven to 180°C (350°F).

2. Mix all dry ingredients in one bowl.

3. In another bowl, whisk the eggs and milk, then add grated fruits/veggies.

4. Combine wet and dry ingredients, stir well.

5. Pour into a lined baking tin.

6. Bake for 35–45 minutes or until a toothpick comes out clean.

7. Cool before slicing.
