Ingredients:
For the Cake:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- Purple food coloring
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- Make the Cake Batter: In a large mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In another bowl, whisk together the vegetable oil, buttermilk, eggs, vinegar, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined. Add purple food coloring until the batter reaches your desired shade.
- Bake the Cakes: Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- Make the Cream Cheese Frosting: In a large bowl, beat the cream cheese and butter until smooth. Add the powdered sugar, vanilla extract, and salt, and beat until light and fluffy.
- Assemble the Cake: Place one cake layer on a serving plate and spread a layer of cream cheese frosting on top. Repeat with the remaining layers, then spread frosting on the top and sides of the cake.
